Paleo No-Bake Nut-Free SunButter Chocolate Bars

Instructions

  • Line a 8 inch square pan with parchment or wax paper and set aside. 
  • In a large bowl, combine SunButter, maple syrup, coconut flour, salt and vanilla. Mix well until everything is combined. Press into prepared pan and place in the fridge for at least 1 hour to chill. 
  • After the SunButter layer has chilled, make the chocolate layer. In a microwaveable bowl or glass measuring cup, combine the chocolate chips and SunButter. Melt in 30 second increments, stirring between each one, until mixture is fully melted and smooth. This should take 1-1.5 minutes. 
  • Pour the chocolate mixture over the SunButter layer and spread evenly. Place back in the fridge for at least 1 hour to set. 
  • Once chilled, cut into 16 bars (4x4) and serve. They are best stored in the fridge, but can be left at room temperature without melting. Can also be packed in a lunchbox. 

Notes

*These can be made with any nut butter if you don't need them nut free. Peanut butter or almond butter would be my recommendations .
