Paleo Pork Chops with Herbed Butter

Ingredients

  • 2 tablespoons olive oil
  • 4 thick-cut boneless pork chops, about 2 pounds
  • ¾ teaspoon salt
  • pepper to taste

Herbed Butter

  • ¼ cup salted grass-fed butter (use ghee for Whole30)
  • ½ teaspoon chopped fresh chives
  • ½ teaspoon chopped fresh flat-leaf parsley
  • ½ teaspoon chopped fresh rosemary
  • ¼ teaspoon fresh thyme
  • 2 teaspoons garlic oil*

Instructions

  • Heat olive oil in a large skillet over medium heat. Season the pork chops on both sides with salt and pepper. 
  • Place the pork chops in the skillet and sear on both sides until they are golden brown and cooked all the way through, about 6 minutes per side. 
  • While the pork chops are cooking, make the herbed butter. Place the butter (or ghee) in a small bowl and add in the chives, parsley, rosemary, thyme and garlic oil. Mix until the ingredients are well incorporated. 
  • Top each pork chop with one-quarter of the butter before serving. 

Notes

*This recipe originally called for ¼ cups soft goat cheese to be added to the butter, but we don't do dairy. Add it if you can tolerate it. *Not Whole30*
