  • 2 tablespoons olive oil
  • 4 thick-cut boneless pork chops, about 2 pounds
  • 3/4 teaspoon salt
  • pepper to taste
Herbed Butter
  • 1/4 cup salted grass-fed butter (use ghee for Whole30)
  • 1/2 teaspoon chopped fresh chives
  • 1/2 teaspoon chopped fresh flat-leaf parsley
  • 1/2 teaspoon chopped fresh rosemary
  • 1/4 teaspoon fresh thyme
  • 2 teaspoons garlic oil*
  1. Heat olive oil in a large skillet over medium heat. Season the pork chops on both sides with salt and pepper. 

  2. Place the pork chops in the skillet and sear on both sides until they are golden brown and cooked all the way through, about 6 minutes per side. 

  3. While the pork chops are cooking, make the herbed butter. Place the butter (or ghee) in a small bowl and add in the chives, parsley, rosemary, thyme and garlic oil. Mix until the ingredients are well incorporated. 

  4. Top each pork chop with one-quarter of the butter before serving. 

Recipe Notes

*This recipe originally called for 1/4 cups soft goat cheese to be added to the butter, but we don't do dairy. Add it if you can tolerate it. *Not Whole30*
